Niche blogging is when you blog about a specific topic and target a specific blogging audience or rather blog reading audience. You blog about what you know and share your interest. Then you get advertisers that also has that interest or they sell the specific thing you are blogging about. Also the readers buy more things from a niche blog because the topic is focussed on what both the reader and the advertiser want. Bringing the advertiser and the blog reader together becomes your job then.
This entire process is also called affiliate marketing. Where you sign up at affiliate marketing companies who will let you sign up as a affiliate and then sell their products for a cut of the deal otherwise known as commission. Affiliate Marketing works great, because not only does the person benefit really well that advertises but the one publishing also stands a chance of making some good money online.
